I visited HK many times, most of the time I self explore the place. It is very easy to get what you want there... The only thing I have yet to try is to pick up girls from the LKF.. Want to try this when i am going to HK in 2 months time..

bro, yes the easiest way is 141 and 161 and to go to the buildings direct. it depends on where you are. e.g. if you are in causeway bay area, the best building to go may be fuji building. if in tst, perhaps try champagne court.

for your budget, you can actually go for hotel reservation as well. check out the websites you mentioned under hotel reservation category. they are usually of a better quality, and you can also get local gers rather than usually PRC gers at the 141 buildings.

yes, they are usually real.
there are only a few koreans, japs, etc. on 141 and they come and go very fast, so you need to act fast if you have decided on one
